Should anyone have leftovers of a wintry broth, don´t throw them away, because they can make an appetizing stir fry in this way.

Óld clothes to use your leftovers

Some time ago I wrote about a traditional Spanish broth which is to Winter what cold soups are to Summer. It´s made by boiling a piece of beef, chicken, bacon, chickpeas, veggies such as white cabbage and spuds as well a carrot, parsnip, leek and celerey and adding a couple of beef bones to give it a flavour All of these have to boil for about one hours if it´s made on an ordinary pot. In the press cooker, it won´t take longer than half and hour or so.
With the liquid of the boiling, we´ll make a thin soup with noodles and we´ll place the meat, chickpeas and veggies on a tray so everyone takes a bit of everything.
A big pot of this will feed an average family, but if one´s living alone, it´ll be hot food for at least three days, which comes handy and affordable.
WHAT TO DO WITH LEFTOVERS
On the third or even fourth day of having made this broth, we may have some leftovers of the broth as well as some of the liquid.
We aren´t going to throw them away, because they´ll be fine if we´ve kept them well in a plastic container and into the fridge.
With the remaining liquid, we´ll make soup. Then, with what it´s left from the broth -few chickpeas, some chicken and beef, etc., we´ll make a stir fry ,as shown on photograph, adding some olive oil in a pan, few chopped cloves of garlic and a small spoonful of sweet or hot paprika, depending on one´s likes.
Stir it fry well in a pan, minding that the cloves of garlic and the paprika don´t get burnt, because they´ll give a bitter taste to the meal.
Stir fry of leftovers of a broth are so appetizing and comforting at Winter time, even though, they´re known as óld clothes´.
