Dairy free doesn't have to mean taste free! These delicious 'free from' muffins are a tasty way to treat yourself and your family. Perfect served with tea, coffee or a soya milkshake.

Dairy Free Blueberry Muffins

Blueberry Muffins

You will need:
100g of oat bran
100g of fresh (or frozen) blueberries.
2 tsp of baking powder
1 tbsp of orange zest
1 medium egg
1 tsp of ground cinnamon (optional)
2 tbsp of runny honey
150ml of soya or almond milk
2 tbsp of dairy free spread

Preheat the oven to a medium heat.

Add the egg, honey, orange zest, cinnamon, spread and soya milk to a large mixing bowl and blend together.

Place the baking powder and oat bran in another bowl and add the liquid mixture.

Add the blueberries and stir well. Spoon the mixture into 8 greased ramekins and place on a baking tray. Bake for 15 to 20 minutes at a moderate temperature (160°C).

Tip: Store in an air tight container. The muffins should keep for up to 5 days.
