Chocolate Biscuit Cake

A simple recipe that doesn't require any baking, making it a delicious, fun treat easy enough for children to get involved. (However, please note adult supervision will be required for melting the chocolate).

Vegetarian Chocolate Biscuit Cake

You will need:
150g (5oz) butter
150g (5oz) plain chocolate
2 large tablespoons of golden syrup
25g (1oz) of almonds or hazelnuts
225g (8oz) of digestive biscuits

1. Chop the chocolate and nuts, crush the biscuits (in a bowl with your hands or in a plastic bag with a rolling pin).
2. Melt the chopped chocolate with the butter and golden syrup in a large bowl over a saucepan of simmering water on a low heat.
3. Add the crushed biscuits and chopped nuts and blend.
4. Spread into a cake tin lined with grease proof paper.
5. Place in the refrigerator for a couple of hours until set, when ready cut into 10 to 16 squares.

You could try adding raisins, cherries or apricots instead of nuts.
