Healthy cinnamon flapjacks

Adding oats to your diet is a good, healthy way to help your body release energy throughout the day. But as we all know oats can be a little, well, boring so why not spice things up with some cinnamon flapjacks. This simple recipe is wheat, egg and dairy free with no added sugar, so should be suitable for all the family to enjoy.

Healthy cinnamon flapjacks

Makes 6-8
250g (8oz) of porridge oats
125g (4oz) of dairy-free spread
125g (4 fl oz) of pear or apple concentrate
50g (2 oz) of dried fruit or nuts
1 table spoon of cinnamon powder

Equipment :
Baking tray
Grease proof paper

Preheat the oven to gas mark 2/150/300
Melt the non dairy spread in a large pan
Add the fruit concentrate
Stir in the oats and chosen dried fruit
Add the cinnamon powder and mix well.
Press the mixture into a baking tray lined with grease proof paper (18 cm).
Bake for about 20 minutes or until lightly browned, then remove from the oven and cut into 6 or 8 pieces with a knife.
Allow to cool, then remove carefully from the tin.

Enjoy with a healthy fruit juice or herbal tea of your choice.
