This is a brief account of a type of potatoes that can be quite a dish.

Heavenly spuds!

"Cachelos" are wonderful potatoes grown in Galicia, north-west of Spain. This must have something to do with their Celtic ancestors, I presume, because nowhere there´re such heavenly spuds, apart from Ireland, which is another spud country.
They´re bit pricey, but it´s worth a treat whenever they´re on sale, which isn´t often, because the crops aren´t large and they probably want for themselves the few tons they grow. Whatever, it´s worth spending the nearly three Euro a bag they cost.
Make a good platter of fries and one will soon want another to enjoy -golden brown and crispy.
Roasted or fried or in whatever way they´re cooked, these spuds are quite a dish.
They´re a must in Galicia´s national dish of boiled ham and their "grelos" (1)
Boiling the ham on a low fire as all the good stews have to be made. Then, adding the spuds and the "grelos" for a bit longer till all is tender, melting on one´s mouth.
Search for "cachelos" wherever you live and treat yourself to a good platter of fries or this boiled ham and "grelos" to dine like a king or queen.
"Cachelos" should be part of Galicia´s national flag, I´d say!

(1) "Grelos" is one of their home grown vegetables, but if unable to find them, some white cabbage will do too. Don´t forget to sprinkle the dish with spicy paprika when it´s made.
