Enjoy cold soups and rich and nutritious salads in Summer as done by the Mediterranean.

Keeping up with healthy traditions

Some people may have decided not to shop for fresh produce in food markets nor to cook at home. Good luck to them with their health problems. However, I still want to keep up with traditions and with the food habits that my mother and my aunts taught me.
Whenever possible, I'll shop for fresh produce in food markets or small green grocery shops. It may be few cents pricier, but quality counts.
Now, it's Summer and it's torrid outside. One doesn't feel like lighting a fire to cook, but we're lucky that Mediterranean diet has countless of nutritious cold soups and salads. This is one of them.

To make such refreshing and nutritious salad, one will need plain boiled beans, some salted cod, tomatoes, onions, black olives without seeds, hard boiled eggs and perhaps some anchovies, but this is optional.
If one can't get plain boiled beans in glass jars, one may boil them till tender, rinse them and place them in salad bowl. Then, we'll add the sheredded dry and salted cod with chopped tomatoes and onions as well as the hard boiled eggs and few slices of anchovies and black olives. We'll toss it all together with a vinagrette of wine vinegar, olive oil and salt.
The salad is already made and we want to enjoy it with relatives or friends, but before we sit at the table, we are to set it with table cloth, cutlery, glasses and a basket for the bread as well as serviettes and the drink. Would anyone say this is a party or a special meal? Nope! It's part of Mediterranean tradition to set a table for each meal everyday and I'd say it's a good tradition, because as important as having a meal, it is also the place we are to have it.
