Let's benefit from legumes

In a couple of recently written articles, I suggested recipes that are easy to make and affordable especially for university students that are subjected to State grants and, therefore, are perennially short of cash for other things and to eat well.
In my first article, I offered a couple of meaty recipes that can be made in the wink of an eye. In another, I wrote about pasta (a filling staple food) and its various ways to make savoury dishes.
Here I'll write about the importance of having legumes at least twice a week for all the minerals and vitamins that they have.
Cooking a dish of legumes is easy, not very expensive and a must have one now that we're leading to the cold days. If one cooks a good pot of them, one can have good and hot food for at least two or three days, provided we keep them well in a plastic container wit its lid and in the fridge.
We can choose from lentils, red or white beans or chickpeas.
Legumes are to be in cold water overnight before we cook them. Then, we're to take a couple of ripe tomatoes, half a white onion and a green bell pepper to make a basic gravy and we can add up chorizo sausage, lean bacon or meat.
This is my latest recipe of legumes that I made at home.
I used read beans that I put in cold water during the night. Then, I boiled them with abundant cold water and a drizzle of olive oil till they were tender. When they were made, I added salt. If we add the salt when they're cooking, the beans will split.
Then, I did a stir fry with white cabbage thinly cut and a couple of cloves of garlic. I boiled a couple of black pudding sausages and a piece of bacon. They don't have to boil for a long time.
We're to put the cabbage on a tray together with the black pudding sausages and the bacon cut into small pieces. We'll serve the beans and we'll add up things from the tray.
This is a nutritious and filing one for cold days, which is cheap enough and it doesn't take long to prepare.
