A terrific source of beta-carotene this healthy vegetarian friendly recipe makes a wholesome soup for all the family to enjoy.

Mediterranean Soup

A delicious, vitamin packed soup that is suitable for vegetarians. This recipe serves up to six and once refrigerated will keep for 3 days.

2 carrots, peeled and chopped
2 tablespoons of extra virgin olive oil
1 red bell pepper, chopped
1 large onion, chopped
2 sticks of celery, cut into pieces
1 clove of garlic, crushed
1 turnip, peeled and chopped
1 tablespoon of finely chopped basil
1 large can of chopped tomatoes (about 400g)
1 small can (about 25g) of red kidney beans, drained and rinsed
1 teaspoon of runny honey
1 teaspoon of finely chopped parsley
Freshly ground black pepper
About 125g of small pasta shells, penne or fusilli
1 litre of vegetable stock

Start by heating the oil in a large saucepan, cook the garlic, onion, celery, peppers, carrots and turnip for 10 minutes on a medium heat.

Add the tomatoes, kidney beans, basil, honey, parsley, black pepper and stock.

Bring to the boil, reduce the heat and allow to simmer for 20 minutes.

Add the pasta and simmer for another 15 to 20 minutes, until the paste is cooked.

Serve with crusty olive bread.
