Purines, what are they?

Purines are an important chemical component in our genes but when we eat too many foods containing purines, we put ourselves at risk and illness can occur. Read on to find out more.

What are they?

Purines occur in all organic material, from plants to animals. The higher the protein of the animal/plant, the higher the purine content, although purines are not protein and are not only linked to proteins.

How do they work in the body?

Cells die in our bodies all the time. When this happens, the cell is broken down. As this occurs, purines are converted into uric acid in our bodies. This is a good thing. When uric acid is released in the body it becomes an antioxidant and keeps blood vessels healthy.

Issues occur when we have excessive amounts of uric acid in our systems. The kidneys regulate the amount of uric acid in the body, so any problems with your kidneys can result in a build-up of uric acid. Eating too much food that is high in purines will also flood your system with uric acid. When this occurs, the acid builds to form crystals. These in turn are deposited in our joints and tendons, in the kidney itself and in other organs. This can be extremely painful.

Gout is one of the main illnesses that is a result of excessive purines in your system, and is a form of arthritis.

What causes the increase in purines?

As mentioned above, a diet that is high in purines is the main cause, although kidney infections/issues may also be a culprit. Alcohol is another factor.

Today, more and more people are binge-drinking. This brings a sudden, large concentration of purine-rich fluids into your system in a very short space of time, overloading your system. do this every week, and you are in with a good chance of developing these crystals.

What can we do?

Switch to a low purine diet to prevent or curb purine build-up. Cut back on your alcohol intake (or cut it out altogether for a while). Red wine in particular has a higher concentration of purines, as do malted alcoholic drinks, such as beer.

Recent research shows that plant purines are not as detrimental to gout as animal purines, so cutting back on meat is a must for a while.

These are the foods with the highest levels of purine content:
Livers, Brains, Gravies, Anchovies, Kidneys, Sardines, Sweetbreads.

And high to moderate:
Asparagus, Veal, Venison, Bacon, Beef, Bluefish, Bouillon, Calf tongue, Carp, Chicken, Codfish, Crab, Duck, Goose, Halibut, Ham, Kidney beans, Lamb/Mutton, Lima beans, Lobster, Mushrooms, Oatmeal, Oysters, Peas, Perch, Pork, Rabbit, Salmon, Cauliflower, Shellfish, Snapper, Spinach, Tripe, Trout, Tuna, Turkey, Lentils, Navy beans, Cheese, Beer, Bread.

To conclude

As mentioned above, we require purines for the production of uric acid in our systems. We do not want excessive amounts, so avoiding the top list is a must, when you think you may have crystals in your system.
