Recipe: Prawn Omelette

Recipe Prawn Omelette


150-200g Prawns - shelled, cleaned and cut cubes (not too small)
and season with:
1/8 tsp Salt & dash of pepper
1/4 tsp Light soy sauce
1/4 tsp Sesame oil
1 Onion - shredded
3 Large eggs - lightly beaten with some light soy sauce about 1/2 tsp and dash of pepper


Pour some oil in a non-stick pan and fry onion still soft.
Add prawns and fry till just cooked.
Spread out onion and prawns evenly, then pour beaten eggs over it.
Swirl pan around to spread the omelet evenly.
When the eggs have set about 2-3 mins, flip the eggs over and cook for another 2-3 mins.

Recipe: Chili Prawn


500 gms prawn, deveined, shells removed and cleaned
1 medium size onion finely chopped
5-6 cloves of garlic finely chopped
8-10 green chilies finely chopped
1/2 tsp grated ginger
1 egg
1/2 cup cornflour
1/2 cup sweet chili sauce
1/3 cup soy sauce
1/4 tsp Ajinomoto
Vegetable oil
Fresh cracked pepper


Make a smooth batter with the cornflour, 1 egg, salt and pepper. While you are doing this, heat oil in a wok to deep fry the prawns. Dip each prawn in the batter, to let it coat evenly and fry them in the hot oil. Drain them on paper towels.

Keep away all the excess oil from the wok keeping about less than 1 tbsp still for tossing the onions, etc.

Add the garlic and chilies and saute them for a few minutes.
Add the grated ginger and chopped onions and let them change into a glassy color.
Make a sauce with sweet chili sauce, soy, cracked pepper, pinch of sugar, since soy sauce already has salt in it, check on the sauce once before you add any salt.
Add this sauce to the sauteing onions and let it cook for about 4-5 minutes till you see the sauce thickening. Add the prawns and stir for a couple of minutes. Your Chili Prawn with a twist is ready- a hint of sweet, a dash of heat and loads of flavor.


Recipe: Prawn karahi/prawn kadahi


1 lb. of Prawns
4 cups of chopped tomatoes
1 " piece of ginger
4 large cloves of garlic
1 tbsp peppercorns, roasted
1 tbsp cumin seeds, roasted
1 tbsp coriander seeds, roasted
1/4 tsp turmeric powder
1 tbsp crushed red pepper, adjust heat level to suit your taste
1 tsp dried fenugreek leaves/kasoori methi
1/2 tsp garam masala powder
1/2 cup of coriander leaves, chopped
3 green chilies, chopped
2 tbsp of lemon juice
Salt, to taste
Oil, as required


Step 1: Remove the head, deshell the prawns, wash thoroughly. (If you want to avoid cutting and cleaning by yourself ,use the frozen ones readily available in supermarket or if you want to use fresh prawns ask your fish monger to do the same for you.) Marinade the prawns with a pinch of salt, keep aside.

Step 2: In the meantime dry roast the cumin, coriander and peppercorns separately, blend in together to make a powder of all the three spices.

Step 3: Make a paste of ginger and garlic, heat a tbsp of oil in a karhai or in your regular pan, add in the ginger garlic paste and fry for a minute or so. Next slide in the prawns and fry for a minute or two on each side until it turns a peach color. Remove the prawns from the pan, keep aside.

In the same pan, heat another tbsp of oil, add the chopped tomato and salt, let cook covered on medium high for a few minutes till it gets soft. The trick to cook onion and tomatoes faster is to add a little salt to it.

Step 4: Next add turmeric powder, crushed red pepper, powder of all the three spices and dried fenugreek leaves, let cook by constant stirring for another minute or two , or until the raw smell of the spices vanish.
Slide in the prawns and let cook covered for 4 to 5 minutes on medium heat.

Step 5: Before removing from the heat add garam masala powder
hopped coriander leaves and chopped chilies, let it rest for 2 minutes.

Step 6: Squeeze 2 tbsp of lemon juice on top, serve hot with Rice/chappatis/naan.

TIP: Pre-ground spices can be used in place of whole spices, but the awesome flavor of the freshly ground spices brings adds a different dimension to the taste and texture of the dish.

Recipe: Prawn Fry


Prawns 1Kg
Onion 3
Tomato 2
Ginger Garlic Paste 1 1/2tablespoon
Red Chilli Powder 2 tablespoon
Turmeric Powder - pinch
Green Chillies 2 to 3
Curry Leaves Handful
Coriander Leaves Finely chopped
Salt for taste
Oil Required

1.Clean, De-vein and wash the Prawns Thoroughly.
2.After Prawns are De-veined, It is necessary to marinate the prawns with sea salt, lemon juice and Turmeric Powder for 5-10 mins and then completely wash it. This process can be followed for all the meat and sea food.Because it removes dirt, germs and makes the food 100% safe to consume.
3.Heat Oil in a Pan. Add finely chopped Onion, Curry leaves and fry till transparent.
4.Once onion is done, add chopped tomatoes, ginger garlic paste, Green chillies, Red Chilli Powder and Turmeric Powder.
5.Fry till raw smell goes away and oil separates to form a gravy.
6.Now add prawns and fry it for 5 mins.
7.Add required salt and water for the prawns to cook and close with a lid.
8.Once the prawns are done, Garnish with Coriander Leaves.
9.Serve Hot.

Erly, great recipes. I'm allergic to any type of shell fish but all the food sounds delicious.
