When we spot signs saying that they´ve freshly made chufa milk drink on the premises, it´s a sign that it´s already Summer.

Refreshing chufa for Summer

Besides smoothies and milkshakes, there´re three grand drinks to quench our thirst. One will definitely be summery wine that I´ve already explained here how to make it. Another will be iced tea with lemon or lime, but the one that tells us Summer is here to stay with use for a while is "horchata".
This is a dry fruit (shown on photograph) that grows and is harvested in many Mediterranean countries and with it, it´s made a delicious milky drink that has to be served chilled.
The chufa have to be in abundant cold water for at least 24 hours Thus, they´ll get bigger and tender if one´s to blend them at home.
In coffee shops where they make their own chufa milk drink, they´ve their machines and it´s quite a skilled job to offer freshly made chufa milk drink every day. They´re to throw away what was left from a previous day to make fresh one. It´s the way it has to be.
However, it doesn´t mean that one can´t make it at home provided one has a strong blender and patience.
After the chufa have been in cold water for 24 hours, we´ll remove them out of the water to place them in a bowl or vase where we can blend them, adding fresh and cold water at a time. Adding some water will help us to blend them without breaking the blender, but we´ve to add small bits of water so as not to get it watery.
Add sugar and powdered cinnamon to taste and continue blending it.
When one has the necessary quantity of this chufa milk drink, we´ll percolate it in a jar and we´ll bring it to the fridge to cool down. The cooler it is, the tastier and refreshing will be too.
I wouldn´t throw away the remaining of the chufa, because this can also be eaten as a snack and it´s really tasty. Or, one can reuse it, adding few more chufa.
When we spot signs advertising freshly made chufa milk made on premises, it´s a sign that Summer is here and a pleasant and refreshing one to see on hot days.

I've never heard of chufa. What does it taste like?

Chufa or Earth almonds are dry and bit chewy and with inside. I can´t describe its flavour, but it´s tasty and pleasant.
