Turkey Meatballs

It can be difficult to maintain a healthy diet all of the time. However it's important to remember that even small changes can make a big difference over time.

Simple Turkey Meatballs

Turkey balls:

Turkey is a very lean meat and is naturally high in protein, zinc and vitamin B12. These benefits make it an excellent choice for people looking for a healthy, low-fat meal option, and is a suitable, tasty substitute for red meat.

500g of lean turkey mince
2 slices of bread
3 cloves of garlic
1 lemon
1 tablespoon of dried mixed herbs
1 small onion
1 tin of chopped tomatoes
1 green or red pepper
Ground black pepper
1 tablespoon of vegetable oil

(Serves 4)

Preparation Method:
1) Begin by preheating the oven to 180°C or gas mark 6.

2) Put the bread and garlic in a food processor and set to chop finely. When complete, mix in the herbs, lemon rind and turkey mince.

3) Grease a baking tray, add a little flour to both your hands and roll the turkey mixture into 12 or 14 balls and place on the tray.

4) Place the meatballs in the centre of the oven and cook for 20 to 25 minutes.

5) Begin to make the tomato sauce by preheating the oil in a non stick pan, fry the chopped onion an one glove of garlic. Add the tomatoes and chopped pepper, gentle bring to the boil and allow to simmer for 10 to 12 minutes, stir.

Serving suggestion: When complete serve with the meatballs on a bed of fluffy basmati rice.
